Beef Wellington Ingredients
- 1kg Irish Grass-Fed beef fillet
- 500g puff pastry
- 500g mushrooms, finely chopped
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 tablespoon butter
- Salt and pepper to taste
- 1 tablespoon Dijon mustard
- 1 egg, beaten (for egg wash)
- Flour (for dusting)
Instructions/Method for Beef Wellington
- Preheat the oven: Preheat your oven to 200°C.
- Prepare the Beef Fillet: Season the beef fillet generously with salt and pepper. In a hot skillet, heat olive oil over medium-high heat. Sear the beef fillet on all sides until evenly browned, about 2 minutes per side. Remove from the skillet and let it cool.
- Prepare the Mushroom Duxelles: In the same skillet, melt butter over medium heat. Add minced garlic and cook until fragrant, about 1 minute. Add finely chopped mushrooms and cook until they release their moisture and become golden brown, about 8-10 minutes. Season with salt and pepper to taste. Remove from heat and let it cool.
