  • Knockanore Irish Mature Raw Milk White Cheddar is made using raw milk on our farm in Ballyneety, Co. Waterford.
  • All of the milk used comes from our pedigree herd of Friesian cows that graze on the lush rolling hills of the countryside, boasting superior quality to other cheeses.
  • Knockanore cheese is made using traditional cheddaring techniques which involve stacking the cheese curds on top of one another to produce a firm but slightly open-textured cheese.
  • Matured for six months, this vintage white cheddar is mild with subtle sweet and creamy tones, but with enough of a tang to satisfy real cheese lovers.
  • This cheddar offers a beautiful texture and consistency.
  • Perfect for a variety of culinary applications, from enhancing gourmet recipes to enjoying with a fine French wine.
  • We use vegetarian rennet in the cheesemaking process and as such all our cheeses are suitable for Vegetarians.

Serving and pairing

  • Enjoy it on its own in a big chunk with some crusty bread.
  • It’s great on white soda bread with a bit of butter and some sweet tomato relish.
  • We always recommend removing the cheese from the fridge a half hour or so before serving to allow the flavours to develop.
  • Knockanore Irish Mature Raw Milk White Cheddar works great with richer styles of white wine such as a buttery chardonnay or lighter reds, perhaps a new world Pinot Noir.
  • It works remarkably well with beers as well.
