Sirloin and striploin come from different ends of the same muscle. Striploin is traditionally the higher quality cut (higher fat content giving them a significantly richer flavour). Due to the artisan nature of our supplier’s processes, the sirloin and striploin may sometimes be interchanged.

With this thick cut of meat, you get to decide how you like it. Sliced thick or thin or cook it whole.
